There is nothing for me that says spring is here, more than eating my first fresh strawberry of the season. I love strawberries any way they are prepared. I enjoy washing them and eating them as they are, adding them to a salad, in a jam, and baking a delicious dessert with them. In addition to their wonderful taste and versatility, strawberries are low in calories and provide an excellent source of Vitamin C, fiber, manganese, and folate.

When choosing your strawberries look for shiny, firm, ripe berries with fresh green caps. Strawberries at room temperature should smell like strawberries. Keeping the berries dry helps slow spoilage. Strawberries can be stored in the refrigerator, unwashed, for 1 to 3 days. When ready to use the strawberries, wash them under cool running water. Dry the strawberries on clean, dry paper towels and remove the green caps, either by carefully twisting the caps off or using a knife to cut them off. Whole berries can be frozen by placing the clean berries on a baking sheet and placing in the freezer until firm. Once firm, the berries can be placed in a freezer container, labeled, and used within a year for best product quality.

A lot of recipes call for strawberries measured in different forms. One pound of strawberries is equal to 4 cups whole, 3 cups sliced, and 1 ¾ cup mashed.

I wanted to share a strawberry dessert recipe that is a family favorite. I hope you enjoy it as much as my family does.

Strawberry Punch Bowl Cake
1 Angel Food Cake (or 2 Angel Food Cake loaves, or pound cake)
large 12 oz Cool Whip
16 oz. sour cream
1 cup of powdered sugar
1 small can of Carnation milk
Mix the above ingredients together.

Cake Topping:
1 package of strawberry glaze
1 quart of sliced strawberries
Mix the glaze and strawberries together.

If using a 9 x 13 dish, place cake mixture on the bottom, then top with cake topping. If using a punch bowl, then layer in the following order: cake mixture, strawberry glaze mixture, repeat ending with strawberry glaze mixture.
